No, I tried that. They said that any pokémon above level 50 will be set at level 50 but any below won't get any level correction.

What did you give to get the power items on gamefaqs, btw?

Is there a way to check IVs of pokémon in HG/SS where they're automatically set to level 50?

I could always abuse Roar after I've set up Stealth Rock with something else, I guess.

Well, the thing about its speed is that it can almost always get a Stealth Rock up before the opponent can do anything.
