Dawn of Souls also added an MP guage, added extra story scenes, improved the menues, and also fixed some glitches that were present in the original NES game. I'd actually consider that a genuine improvement, eventhough I still greatly prefer the NES version.
You're right about All-Stars, though. That game didn't change anything for the better except maybe the graphics, and personally, I didn't even like that.

Funny, I was even going to mention those as examples of good remakes, along with Dragon Warrior, Final Fantasy 2, and...I forgot the last one. All are really good games that really managed to improve the gameplay and story in the right areas so they were more fun.
